Red, White and Blue

2012 is definitely a year to celebrate being British so why not try these easy peasy Union Jack cupcakes.

Here’s how:

Vanilla Mixture…(serves 12*)

  • 120g plain flour
  • 140g caster sugar
  • 1 and half tsp baking powder
  • a pinch of salt
  • 40g softened unsalted butter
  • 120ml whole milk
  • 1 egg
  • 1/4 vanilla extract
  1. Preheat the oven to 170C (Gas mark 3)
  2. Mix together flour, sugar, baking powder, salt and butter until smooth
  3. Gradually pour in half the milk until well blended
  4. Whisk the egg, vanilla and remaining milk together in separate bowl
  5. Pour into flour mixture until smooth. Do not over mix.
  6. Spoon mixture in cupcake cases until two-thirds full.
  7. Bake for 20-25 minutes untol golden brown (skewer should come out clean)
  8. Leave until completely cool before icing

Red, White and Blue Buttercream Icing…

  • 250g icing sugar (sifted)
  • 80g unsalted butter
  • 25ml whole milk
  • a few drops of vanilla extract
  • raspberries and blueberries
  1. Beat icing sugar and butter together until well blended
  2. Mix milk and vanilla in separate bowl
  3. Then add to butter mixture slowly until light and fluffy
  4. Spoon into a piping bag with a large nozzle
  5. Make small circular swirls on top of the cupcakes
  6. Finish off with a raspberry and blueberry


* use muffin cases to make 12 or cupcake cases to make 24
