Skinny Banana and Pecan Muffins

Ever wondered what to do with those black bananas sitting in your fruit bowl? Well here’s a perfect recipe to use up those over-ripe bananas and with only 5g of fat and 150 calories per muffin its virtually guilt-free too!

So here’s how:

Ingredients (serves 12)

  • 275g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 3 large ripe bananas (about 450g)
  • 70g golden caster sugar
  • 1 large egg
  • 50ml semi-skimmed milk
  • 70g butter, melted and cooled
  • 100g pecan nuts, toasted and roughly chopped
  1. Pre-heat the oven to 180C and line a muffin tin with paper cases
  2. Sift flour, bi-carb and salt together
  3. In a separate bowl, mash bananas with a fork and ass sugar, egg, milk and butter
  4. Add to flour mixture and stir in nuts. Mixture should be like a batter in consistency
  5. Spoon into cases and bake for 20 minutes until golden brown

These are best served fresh from the oven. Enjoy!!!!
