Banana Raisin Loaf

The combination of juicy raisins and crunchy pecans makes this banana loaf truly irresistable.

Here’s how:

Ingredients (serves 8)

  • 75g butter
  • 100g caster sugar
  • 1 egg
  • 200g self raising flour
  • 1/4 tsp salt
  • 1/4 tsp bicarbonate soda
  • 100g raisins (or sultanas)
  • 2 large ripe bananas, mashed
  • 50g pecan nuts, roughly chopped


  1. Grease a 450g loaf tin with butter (or alternatively line with baking paper)
  2. Mix together butter, sugar and egg in a bowl
  3. Sift flour, salt, bicarb and fold into mixture until well blended
  4. Stir in raisins, bananas and pecans
  5. Pre-heat oven to 180C and bake for 50 minutes to 1 hour until a skewer inserted in the centre comes out clean
  6. Transfer to wire rack and remove from tin to cool

Best served with butter and a cup of coffee. Enjoy!
