Gluten-Free Double Chocolate Brownies

Gluten-free baking has never been so simple. By swapping normal wheat flour for gluten-free flour you can cater for any friends or family who may have a gluten allergy. This is exactly what I’ve done with these double chocolate brownies and they taste exactly the same – delicious!

Ingredients (serves 12):

  • 100g butter
  • 225g golden caster sugar
  • 40g cocoa powder
  • 2 eggs
  • 1 tsp vanilla
  • 50g gluten-free self raising flour
  • 50g white chocolate chips
  • 50g dark chocolate chips

  1. Beat together eggs and caster sugar until smooth
  2. In a separate bowl melt butter and stir in cocoa powder
  3. Add the butter mixture to the eggs and sugar and add vanilla
  4. Sieve in flour and mix until smooth
  5. Pour in chocolate chips and spoon into 9x20cm greased baking tin
  6. Bake in 180C oven (160C fan) for 20-25 minutes until flightly hard on top
  7. Leave to cool for 10 minutes then cut into squares

These brownies can be served either hot or cold. I often dust with icing sugar and serve with vanilla ice-cream.
