Raspberry Mint Frozen Smoothie

I need a break from baking. I need an antidote to cream cheese icing and chocolate sponge. Enter in the frozen smoothie. It has the appearance of a calorie-ridden dessert without, well the calories. Not only is this frozen smoothie high in dietary fibre, rich in calcium, magnesium, phosphorous, potassium and vitamin C but is bursting with deliciousness and takes less than 5 minutes to make. I used raspberries, bananas and mint but you can make any flavour combination you want.

So here’s how (serves 4):

  • 2 ripe bananas
  • 200g frozen raspberries
  • 2 tbsp finely chopped fresh mint

Put all ingredients into a blender et voila!
