I can’t believe you made that…

Calling all chocolate-lovers… This is another inspiration from Lorraine Pascale. I recently made this cake for a friend’s birthday and it no doubt has the ‘wow-factor’. Despite its appearance, it is possible the easiest cake you’ll ever make (and perfect for when you want to impress). I think the key ingredient is a really good quality chocolate like Green & Black’s 70% cocoa solids for a really rich, luxurious taste. Lorraine uses cigarillos but dark chocolate fingers are just as effective (and cheaper!). I dipped strawberries in chocolate but raspberries or cherries work just as well.

Ingredients (serves 12):

  • 150g soft butter
  • 250g golden caster sugar
  • 150g self-raising flour
  • 125g soured cream
  • 4 eggs
  • 50g cocoa powder
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla extract

Chocolate Buttercream:

  • 100g dark chocolate
  • 550g icing sugar
  • 250g butter
  • 2 tbsp milk

For decoration:

  • 2 punnets of strawberries
  • 3 packets of chocolate fingers (I used Cadbury’s new Bournville choc fingers)
  • 100g dark chocolate

Method:

  1. Preheat the oven to 180C (160C fan) and grease two 20cm round cake tins
  2. Mix together butter, sugar, flour, sour cream, eggs, cocoa powder, baking powder, salt and vanilla until well blended
  3. Divide equally between cake tins and bake for 25-30 minutes until skewer comes out clean
  4. Leave to cool for 10 minutes and then remove from tin and place on a cooling rack

To make the buttercream:

  1. Melt the chocolate in a bowl over a some simmering water until smooth and silky
  2. Sift icing sugar and mix in butter and milk until light and fluffy
  3. Pour in the melted chocolate until even chocolatey colour
  4. Once the cake is cool, place on a cake board and place about a third of butter cream on top of cake
  5. Place the other cake on top and cover with the remaining icing
  6. Arrange the chocolate fingers around the edge of the cake
  7. To finish, melt the rest of the chocolate and dip the strawberries into the bowl and arrange on top of the cake
