Real Men’s Cupcakes

So my boyfriend is allergic to eggs and can rarely eat any baked goods (very sad I know). I’ve tried concocting several egg-free recipes but they often end up tasting pretty unappetising. Well, until I stumbled across this great American chocolate cupcake recipe a few weeks ago. I added chocolate chips and fudge chunks which melt into the sponge and make these bad boys extra scrummy. To make them really manly (somewhat of an oxymoron I know) I made mini rugby balls cut out of chocolate silk to decorate the buttercream icing. There you have it…real men’s cupcakes.

So here’s how (makes 12): 

  • 180g plain flour
  • 200g golden caster sugar
  • 40g cocoa powder
  • 1 tsp bicarbonate soda
  • a pinch of salt
  • 240ml water
  • 80ml vegetable oil
  • 1 tbsp white wine vinegar
  • 1 tsp vanilla extract
  • 50g fudge chunks
  • 50g dark chocolate chips

Buttercream Icing:

  • 250g icing sugar (sifted)
  • 80g unsalted butter
  • 25ml milk
  • 1 tsp vanilla extract
  • 2 tsp green food colouring (for the grass effect)
  • chocolate silk to make rugby balls


  1. Pre-heat the oven to 180C (160C fan) and line a cupcake tin with cases
  2. Mix flour, sugar, cocoa, bicarbonate soda and salt until well blended
  3. Add water, oil, vinegar, vanilla and chocolate and fudge chunks
  4. Spoon mixture into cases and bake for 25-30 minutes

For the buttercream icing:

  1. Mix icing sugar and butter together
  2. Pour in milk, vanilla and food colouring until smooth and light green in colour
  3. Roll out chocolate silk and cut into rugby ball shape

They say that “the way to man’s heart is through his stomach” and I would whole-heartedly agree!
