Toffee Apple Muffins

 

Toffee Apples are synonymous with Bonfire Night. There’s nothing quite like sinking your teeth into the sweet, sticky toffee and crispy apple whilst standing around a big bonfire – the inspiration for these autumnal muffins. As you bite into them, you are immediately greeted with a delicious mixture of juicy apple and molten toffee giving you the same warm, cosy feeling inside.

Here’s how (makes 12): 

  • 2 eggs
  • 80g golden caster sugar
  • 240ml milk
  • 100g melted butter
  • 300g plain flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 eating apples, finely chopped
  • 200g toffee pieces

Method:

  1. Pre-heat the oven to 190C (170C fan) and line a muffin tin with paper cases
  2. Mix eggs, butter, milk and sugar together
  3. Sift in flour, baking powder, cinnamon and salt into the bowl
  4. Add in apple pieces
  5. Quarter-fill each case with the mixture and then put toffee pieces on top
  6. Cover toffee with the remaining mixture
  7. Bake for 30-35 minutes until golden brown

Try serving them piping hot with custard for an autumnal pudding.
