I heart Brownies

 

Apologies for blowing my own trumpet but these are possibly the best brownies you will EVER taste!

I’ve been hounded for this recipe over the years and it has remained a well kept secret- well until now. I first came across this recipe whilst watching Blue Peter (yes it was a few years ago) and it has never failed me. They are big, fat, stuffed full of chocolate and what’s more, incredibly easy to make. To make them more appealing I cut out a heart-shaped stencil and dusted icing sugar over the top. For a more festive feel, why not try cutting out some holly or star stencils- a great alternative to Christmas cake or pudding.

Ingredients (serves 12):

  • 100g butter
  • 225g golden caster sugar
  • 40g cocoa powder
  • 2 eggs
  • 1 tsp vanilla
  • 50g self raising flour
  • 100g dark chocolate chunks (I often used Bournville)

Method

  1. Beat together eggs and caster sugar until smooth
  2. In a separate bowl melt butter and stir in cocoa powder
  3. Add the butter mixture to the eggs and sugar and add vanilla
  4. Sieve in flour and mix until smooth
  5. Pour in chocolate chips and spoon into 9x20cm greased baking tin
  6. Bake in 180C oven (160C fan) for 20-25 minutes until flightly hard on top
  7. Leave to cool for 10 minutes then cut into squares
