You want S’more?

If you’ve ever sat around a campfire with American friends you will have certainly come across S’mores…and for those of you who haven’t, I shall enlighten you. You make S’mores by squishing together a toasted marshmallow and candy bar (piece of chocolate) between two graham crackers (which are a bit like digestive biscuits). Ta da! Its as simple as that. Your very own little campfire sandwich. So I thought I’d create these classic American treats but with a bit of a twist. Here’s how to make super-scrummy S’more bars…

  • 160g plain flour
  • 100g graham cracker crumbs (or use digestive biscuits)
  • 1 tsp baking powder
  • a pinch of salt
  • 115g melted butter
  • 100g granulated sugar
  • 50g brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 100g dark chocolate chunks
  • one pot of marshmallow fluff
  • 100g mini marshmallows (optional)

  1. Mix together the flour, graham crackers, baking powder and salt
  2. In a separate bowl mix sugar, butter and vanilla
  3. Pour into flour mixture and add in egg until it forms a dough
  4. Spread half the dough evenly across a 10x10cm greased baking tin
  5. Then layer chocolate chunks and marshmallow fluff
  6. Sprinkle mini marshmallows on top for extra gooey-ness
  7. Then roll out the remaining dough and place on the top
  8. Bake for 25-30 minutes at 180C (160C) until lightly golden on top
  9. Leave to cool completely until cutting into squares
